Add dried Butterfly Pea flowers to a teapot. You can us 3-5 flowers per cup of water. Boil some fresh water and pour into the teapot. Steep for 3-5 minutes. Pour into a glass or mug and enjoy! Use a glass teapot and glass cups to brew and serve the tea for the best visual effect. Blue Butterfly Pea Tea has a very mild taste can be easily blended into other drinks offering its beautiful colour changing effects to other recipes. Add sweetener as desired.

As a refreshing drink:

Fill a glass 1/4 to 1/3 with Butterfly Pea Tea. Add ice and 2 teaspoons of lemon or lime juice for the colour change. Then top with soda water or Sprite/Lemonade for some fizz and enjoy!

As a cocktail:

Make a Butterfly Pea flower syrup by heating together:

- 1 cup water

- 1 cup sugar

- 1/2 cup dried butterfly pea flowers

Allow it to come to a simmer and stir to dissolve sugar. Once dissolved, turn to simmer on low for an additional 5 minutes.

Remove from heat and let cool, strain into a jar.

To make the cocktail:

Fill a tall glass with ice. Pour in 2oz of the butterfly pea flower syrup. Then add 2oz vodka or gin, the juice of 1/4-1/2 a lemon, then top off with sparkling or tonic water.

Stir and serve immediately. Enjoy!
